Beefy Heart Attack GET! Dip

beefy

Contributed by Kelly Dawson

Ingredients:
1 lb ground beef (80% or 90% lean)
1 packet taco seasoning  (or add Spice Melange)
4 oz cream cheese
1 lb shredded or cubed cheese (mozzarella or colby works like a charm) I used mozzarella and I love that in this.
1 14-16 oz can of refried beans
1 small can diced jalapenos (or diced green chilies for less heat) You can also use diced green chilies if you want a little less heat
8 – 16 oz salsa (any heat desired)
Tortilla chips

Directions:
1) Mix the cream cheese, shredded/cubed cheese, refried beans, jalapenos, and salsa together in a crockpot.  Set it on “high” to start.
2) Brown the ground beef in a heavy skillet till thoroughly cooked.  Drain the fat into a lidded glass jar, and let that cool till you can dispose of it safely.  Add the taco seasoning (and any water it may call for) and simmer according to the packet’s directions.
3) Once the taco meat is done cooking, mix it into the crockpot with the rest of the ingredients.  Keep the crockpot on “high” until everything is melty and gooey and heart attack inducing.  Then turn the heat setting to “low” or “warm”.
4) Serve with chips of your choice (I serve it with tortillas, but I’ve had it with Fritos, potato chips, and Cheetos too!).
NOTES:  I usually make a double batch so I can have leftovers (and send some home with my gamers) when I make it. And it freezes well!

Geek note:
It lasts for an entire gaming session (provided that your players don’t nom it all), leftovers go very well with rice or noodles (these are essential staples of the geeks I know), and it helps maintain that geeky physique!
